The Red River gorge is a great place for rock climbing, along with Natural Bridge. Also Miguels pizza in located off route 11 in the Natural Bridge park has equipment for rock climbers.

Also at natural bridge there is a rock climbing course near torrent falls where you can go. I believe they have beginner course all the way to pro course for people to do.

Anywhere near Cumberland Falls is pretty good. Altough me and my buddies done more repeling than anything. Also behind the spillway at Laurel Lake in Corbin, KY. Spillway will take you to the headwaters of the Cumberland.

Yep! The Gorge is great. There are plenty of maps available. Miguels has great pizza and the atmosphere is awesome.
