You are right that you can only have 11 on the field... but a typical team will only have one or two playmakers on both sides of the ball, when you double the ammount of boys to choose from, you also double your number of playmakers. It's a law of averages.....

When you only have 150 boys to choose from, your odds of having 11 kids READY and physically mature for varsity football is alot less likely than if you had 300 boys to choose from.

Also, a larger talent pool affords you the opportunity to play completely seperate offensive and defensive units. Could you imagine how good Belfry and Russell would be if they had the resources to only have to play their starters one way and not two?
